Peas and Ham Fettuccine

Who doesn't like green peas and ham. Add fettuccine with Parmesan cream sauce and you are in silky yummy tummy town.

1 Tbsp. butter
½ cup fresh ham, sliced
1 tsp. garlic, finely chopped
salt
black pepper, freshly cracked
pinch oregano
1 Tbsp. green onions
¼ cup white wine
2 Tbsp. lemon juice, freshly squeezed
¼ cup fresh or frozen green peas
¼ cup heavy cream
6 oz Pasta Verde (green pasta, preferably fresh)

Garnish:
¼ Parmesan Reggiano cheese, fresh grated

Heat butter or oil in a skillet. Add ham, desired seasonings, garlic, herbs, green onions, then sauté for approximately 1-2½ minutes. Add wine, and lemon juice, peas, and cream during the last minute of cooking.

Cook fettuccine according to package directions; drain, keep warm.

While pasta is cooking, bring ham peas and cream to a heavy simmer, stirring constantly, until slightly thickened.

Add pasta to seasoned mixture, toss and sprinkle with Parmesan and serve.
