Shrimp and Cheese Grits

Less is more here. One, two, three and you have cheesy goodness augmented with the subtle taste of plump shrimp and baconess that will take you over the top wanting more of this dish.

1 cup grits
1 cup extra sharp cheddar cheese
1½ Tbsp. butter
4 slices bacon
1 Tbsp. olive oil
8 large shrimp, peeled, deveined and cut into ½ pieces
1 Tbsp. lemon juice
1 clove garlic, minced
2 green onions, chopped

¼ cup fresh parsley, chopped
hot sauce

Cook grits (according to package instructions) Add cheese, butter cover and remove from heat. Cook bacon with olive oil until crispy. Remove and place on paper towel to drain. Add shrimp into the bacon fat and cook 1-2 minutes until pink. Add lemon juice, garlic, green onions and continue cooking 2-3 more minutes. Add cheese grits to bowl and top with shrimp mixture.

Finish with hot sauce to taste and chopped parsley. Serve immediately and enjoy.

Makes 2 servings.
