Some pretext – Villa Rolandi was the vision of Mexican businessman, Señor Rolandi, who had the ultimate dream 35 years ago, when he purchased the land, where this acclaimed hotel now sits. It has been enjoyed for the last 16 years by wealthy Mexicans, International and Celebrity visitors, (two looking like Jack Nicholson & Justin Timberlake, apparently rumored to be there during our stay, one which the hotel would neither confirm or deny). The art of life, and exclusivity of this property shares many similarities to European old world countries and discrete hideaways for the rich and famous. Casa Rolandi, the restaurant, started back in the late ‘80’s and is ‘the spot’ even today, for those discerning foodies – it was the foundation from which the hotel was eventually born. Our first night, we enjoyed salad Caprese, beef carpaccio, fresh grilled snapper and crepes Suzette (served tableside) delicious! Breakfast for us, consisted of freshly squeezed orange juice, fruit plates and the most divine egg over steamed asparagus, hollandaise sauce, sprinkled with the best Italian Parmigiano-Reggiano, fresh croissant & coffee to finish. If you want to have lunch around the pool or on the beach, endless tasty options await, how could you go wrong with the ceviche of the day or brick-oven-baked pizza and an ice cold beer, yes they have hamburgers and yummy sandwiches too. Note: Two acclaimed Casa Rolandi restaurants exist today, here at the hotel and the other, opposite the Ritz Carlton in Cancun. Pizza Rolandi Bistro’s can be found throughout the Yucatan, contributing to the admired culinary Rolandi gastronomic tasty business model. The symmetry between Villa Rolandi’s long-standing reputation for excellence, bodes well with Zoetry Resorts promise of “Endless Privileges”, taking ‘all inclusive’ to an unexpected level.

We’ve travelled to 47 countries on six continents and lived in several foreign lands, yet Mexico remains one of our favorite destinations. Perhaps in part it is because, as new Zoetry General Manager, Marco Soria (originally from Naples, Italy) said, “it’s one thing to have efficient staff, it’s exceptional to have an efficient, friendly and truly caring staff,” most having been with Villa Rolandi since its inception, making Marco and his 2nd in command, ten year VR consummate hostess, Delia, proud to offer the hospitality that exudes from every aspect of this charming boutique hotel. Their attention to detail, especially when booking directly with Zoetry reservations (yes they will price match 3rd party booking agents) is a welcome addition to one’s peace of mind with communications prior to arrival, assuring seamless ground and private yacht transportation from the airport to the island. Step back in time, experience genuine service, and maybe even elevate your consciousness. Leave the iPhone, laptop, and your cares behind. Bring a good book or two, talk to your partner, take in the tranquil scenery, relax and simply do nothing…we dare you, que sera sera! For those who just can do nothing and seek activity, you can always rent a golf cart and tour the island from Playa Norte to Punta Sur, zip line at Gaffron Park, snorkel in the pristine Caribbean waters, swim with the dolphins, or enjoy a day of deep sea fishing.
World-renowned Chef training results in gourmet delights
Now, with Zoetry Wellness Spa & Resorts managing the property, they have introduced a 2nd restaurant, Le Metissage, a fusion of Mexican & French cuisines offering up a level of gastronomy rarely found today, even in big metro markets, let alone on a tiny little island off the coast of Mexico. Headed up by Rolandi’s Executive Chef, Danielle & Chef, Felipe, both of whom, have trained under legendary French Michelin Star & world renowned Chef, Paul Bocuse. Be prepared to let your eyes feast on these artfully prepared nouvelle cuisines, seven-course dishes, such as a Duck confit, Broccoli foam w/Grouper, roast suckling pig, perfectly seared tuna in a soya demi-glaze with wafer-thin pineapple, veal cheek together with mouth-watering sinful desserts. I’m at a loss to describe the flavors that danced on our taste buds, leaving us in heavenly bliss. Something sweet was called for to calm us down. The most velvety vanilla crème Brule and hazelnut ice cream with a frothy cappuccino and Grand Marnier led us gently back to earth. We had fallen instantly in love in Los Cabos, thirteen years ago and did so again this time at Le Metissage. This gastronomic experience is only equaled by the restaurant Manager, Jesus’ attention to your every need, with wine pairings to compliment each delectable bite. Memories that will last forever
Our VR/Zoetry family, Marco, Delia, Jesus, Ricky, Juan Carlos, Ramos, Miguel, Vladimir, Luigi, Hilaldo and private yacht “Cocoon” crew, made it difficult to say goodbye, so we decided to say “hasta luego” until our return. Be prepared to enjoy this lovely old, unique hotel in a magical setting, bathed in a warm glow by day and kissed by a setting sun each night. The facelift is taking place, one nip, and tuck at a time, so as not to disturb her treasured guests. Look beyond her age and appreciate her grace and honored reputation. Delight in the fact that you have chosen to be embraced by this one-of-a-kind hotel. As a pampered guest, you will experience something you will treasure FOREVER, not easily found in today’s fast-paced, cattle driven tourist industry.
